Mini Meatloaves with Spinach

Ingredients:

  • 1/2-pound lean ground beef
  • 2 tablespoons tomato paste
  • 1 teaspoon Dijon mustard
  • 1 egg, beaten
  • 1/2 teaspoon ginger garlic paste
  • 1/2 cup shallots, finely chopped
  • 1 tablespoon canola oil
  • 1/2 teaspoon coconut amino
  • 1/4 cup almond meal
  • 1 bunch spinach, chopped
  • 1 teaspoon dried parsley flakes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon dried sage
  • 1/4 teaspoon cayenne pepper
  • Kosher salt and ground black pepper
  • 2 tablespoons sour cream

Kitchen Equipment:

  • muffin tin
  • oven

Directions:

  1. Place the meat mixture into a lightly greased muffin tin. Bake the mini meatloaves in the preheated oven at 360 degrees F for 20 to 28 minutes.
  2. Serve with sour cream and enjoy!
